Butter cake

This is a sugar-dusted, walnut-studded version, perfumed with nutmeg. That said, there are a thousand other directions you can take this cake. It's so simple and incredibly good.


Butter cake Recipe (Ingredients)

  • 3 tablespoons / 35g granulated sugar
  • 2/3 cup / 94g all-purpose flour
  • 2/3 cup / 72g dark rye flour
  • 1/4 teaspoon / 2g fine grain sea salt
  • 1 1/2 teaspoons / 3g freshly grated nutmeg
  • 4 large eggs
  • 1 1/3 cups / 260g granulated sugar
  • 14 tablespoons / 200g unsalted butter, melted and cooled a bit
  • 1 cup / 120g walnuts, finely chopped to serve: powdered sugar, loosely whipped, lightly sweetened whipped cream, cinnamon

Iced Green Tea - cold-brewed, accented with rose and a bit of whole coriander - such a pretty, warm weather refresher.


Iced green Tea Recipe (Ingredients)

  • 2 tablespoons good quality loose leaf green tea
  • 1 tablespoon (unsprayed) dried rose petals (optional)
  • 1 tablespoon whole coriander seeds (optional)
  • 4 cups filtered water, divided

Pasta zucchini

If you have an endless supply of zucchini right now, this is your recipe. A simple, garlic-boosted pasta, it uses two pounds of zucchini, and is endlessly adaptable.


Pasta zucchini Recipe (Ingredients)

  • 8 ounces dried pasta
  • 3-4 medium zucchini (1 kg), washed
  • 2 tablespoons extra virgin olive oil
  • 6-8 medium cloves garlic, grated on microplane
  • 1/2 teaspoon fine grain sea salt
  • 1 1/2 cups grated Parmesan or pecorino cheese (fluffy, not packed)
  • 1 cup basil, thinly sliced
  • Black pepper
  • Toasted almond slices
